
Peanut Butter & Fudge Brownies
Ingredients:
Brownies:
- ¾ cup of butter, softened
- 7 oz semisweet chocolate, chopped
- 3 oz unsweetened chocolate, chopped
- 1 ½ cups granulated sugar
- 1 ½ tsps. vanilla extract
- 4 large eggs
- 1 cup all purpose flour
- 1 cup roasted salted peanuts, chopped
Frosting & Ganache:
- 1 cup chunky peanut butter
- ½ cup butter, softened
- ¾ cup powdered sugar
- 1/8 tsp ground nutmeg
- 1 tbsp whole milk
- 1 tsp vanilla extract
- 7 oz semisweet chocolate, chopped
Directions:
Brownies:
Preheat oven to 325.
Line 13x9 baking pan with foil, leaving long overhang.
Butter foil.
Place ¾ cup butter in large, heavy saucepan.
Add both semisweet and unsweetened chocolate, stir over low heat until smooth.
Remove from heat.
Whisk in sugar, vanilla, and then eggs, 1 at a time.
Fold in flour, then peanuts.
Spread in prepared pan.
Bake until fork inserted into center comes out with moist crumbs, approximately 30 minutes, dependent on oven.
Place pan on rack, cool.
Frosting:
In medium bowl, beat peanut butter and ¼ cup butter with electric mixer until well blended.
Beat in powdered sugar, nutmeg, then milk and vanilla.
Spread frosting over cooled brownies.
Ganache:
In heavy small saucepan over low heat, stir chocolate and ¼ cup butter until smooth.
Drop ganache over frosting, and spread to cover.
Chill until set, about 1 ½ hours.
Cover and keep chilled.
Transfer brownies to cutting surface, cut into squares.
Bring to room temperature and serve. Enjoy!
