Pesto Gnocchi with Cherry Tomatoes and Goat Cheese
Ingredients:
- Gnocchi (I used two bags of store bought—approximately 5 cups).
- ½ cup of Pesto (I used store bought basil and cheese pesto).
- ½ cup cherry tomatoes, cut in half.
- ½ cup goat’s cheese, crumbled.
Directions:
Place gnocchi in pot of boiling salted water. They’re cooked when they all rise to the top.
Rinse cooked gnocchi with cold water.
Place cooked gnocchi in medium-sized bowl.
Stir in pesto.
Stir in cherry tomatoes.
Add crumbled goat’s cheese and lightly stir.
Serve and enjoy!
