Red Velvet Cheesecake Brownies
Ingredients for brownies:
- 4 eggs
- 1 cup butter
- 2 cups granulated sugar
- 4 tsps. vanilla extract
- ½ cup cocoa powder
- 2 tsps. red gel food coloring
- 1 ½ tsps. white vinegar
- 1 ½ cups all-purpose flour
Ingredients for cheesecake:
- 2 8 oz bricks of cream cheese, softened
- ½ cup granulated sugar
- 2 egg yolks
- 1 tsp vanilla extract
Directions:
Preheat oven to 350F. Spray a 9x13 inch baking pan.
Brownie layer: In a medium-size bowl, beat 4 eggs together. Melt cup of butter
in micro-safe bowl. Pour in with eggs and beat. Add 2 cups sugar, 4 tsps. vanilla, cup of cocoa, 2 tsps. red food coloring, and 1 ½ tsps. white vinegar, and beat. Add 1 1/2 cups flour slowly. Beat until well combined. Pour mixture into prepared pan, setting aside 4-5 tbsps. of brownie mix.
Cheesecake layer: In a medium-size bowl, beat softened cream cheese, ½ cup sugar, 2 egg yolks, and 1 tsp vanilla until completely smooth. Layer on top of brownie mix in pan, then top with leftover brownie batter. Take a knife, and move through the layers to create a swirl pattern.
Bake for 35-55 minutes, dependent on your oven. Mine took 50 minutes.
Allow brownies to cool completely before cutting into squares.
Store covered at room temperature for 3 days or for 6 days covered in refrigerator. Enjoy!
